So, let’s talk about chocolate.
For most of my life, I have been a huge consumer of North-American-style chocolate and candy. You know the stuff — you eat a handful, and the amount of refined sugar (very addictive) in it causes you to eat another, and then another, and before you know it, you’re completely sailing on sugar right up until you smash head-first into the Big Wall of Sugar Crash and Digestive Trash.
Over the last ten years, I’ve been improving my diet and learning things about my health. I’m now a GF vegetarian who often eats vegan, and organic produce is my friend. I’ve never lost my taste for chocolate, though, and just as I was searching for a chocolate fix that would make my brain happy but not trash my system, my friend Nicky started experimenting with the creation of raw chocolate bars. I was the grateful recipient of some of her earliest concoctions, which were already really good even in the development phase. The chocolate bars that Nicky has been producing over the last three years in particular are nothing short of stunning — silky-smooth raw chocolate in some absolutely delightful flavour and texture combinations.
