I was drawn to participate in Nicky’s nut cheese course because the truth of the matter was that I couldn’t keep asking her to make me more cheese! I wasn’t sure that I would feel confident to make my own cheese, I mean really, isn’t it just fancy chefs that make gourmet cheese? But Nicky has a flair for making things simple. She guides course participants gently and playfully through the whole process in simple steps with visuals to assist in comparing textures and consistency at different stages. She provides advice on utensils, blenders, substitutes and more while simultaneously throwing in little gems of wisdom on health and nutrition. I would highly recommend her course for any cheese lovers who also care about healthy food and want to bring the gourmet home.
